Cucumber, Dill and Sunflower Seed Soup *raw vegan*



I made this raw cucumber dill soup today. This recipe was inspired by one in Jeremy Safron's recipe book The Raw Truth. The recipe that I made is not much like the one in the book but, it turned out really great and the kids loved it.

Ingredients
1 cup raw hulled sunflower seeds (soaked over night  or at least 8 hours and rinsed)
11/2 cups of fresh cold water
1 or 2 large cucumbers (peeled and chopped)
1/2 ripe avocado
2 heaping Tbsp dried dill
1 - 2 cloves minced garlic cloves
red star nutritional yeast to taste ( I used about 1-2 tsp)
sea salt and fresh ground pepper to taste
agave syrup to taste

Directions
Blend the sunflower seeds and water until smooth.
Add cucumbers, avocado, dill and garlic and blend again.
Add the red star, salt, pepper and agave to taste and serve right away.
