To make the crust, mix all of the ingredients together and press into a parchment paper lined 9x9 dish. You will have to melt the cocoa butter and possibly the coconut oil using the double boiler method before mixing it in. Then, pop the crust in the freezer while you prepare the topping.</div>

Several weeks ago, I happened upon this lovely thistle flower next to a pond. I love thistles. Part of my love of thistles may have to do with my Celtic heritage, as the thistle is a strong Celtic symbol. I love the story about Scotland being saved from a Viking invasion by a single thistle...<br />

In general, I am a big fan of weeds; the wild and free plants growing all around us that we so often consider to be a nuisance. There is so much to learn about them and from them. And I notice that the weeds that are the least liked in one's lawn, such as thistles and dandelions for example, are so often the ones that contain the most potent medicine for us. </div>

Milk Thistle (Silybum Marianum) is a potent detoxifier. It can actually assist in repairing liver cells! And it protects the liver against the damaging effects of alcohol and other poisons. Although my practice focuses on homeopathic medicine, I will quite often suggest a few other beneficial natural health supplements to my clients that I know will assist in their treatment. I recommend milk thistle to any of my patients who appear to have a sluggish liver and need some additional support. In our modern age, I feel that many of us can benefit from additional support for our over-worked livers. If you are considering a cleanse, which I think is a good idea in the spring and fall, think about taking milk thistle tincture as part of your cleanse.<br />
<br />
St. Mary's Thistle (another name for milk thistle) is also a lesser known homeopathic remedy. <b>Carduus Marianus</b>, is not surprisingly used as an organ specific remedy for the liver. This remedy is used to treat inflammation of the liver (especially the left lobe) that is worse from lying on the left side and from motion but better from pressure. Terrible attacks of gallstone colic, fullness and soreness in the hepatic region and cirrhosis with it's characteristic jaundice with clay coloured stools and dark urine can be treated with this great homeopathic remedy. But please don't treat yourself or others for advanced or chronic ailments. Contact a trained homeopath.<br />

I really appreciated being asked and I gave my honest opinion. I thought you might like to hear about my thoughts on natural eye beauty as well.</div>

In my opinion, eating well, drinking plenty of water and sleeping at least eight
hours a night is still the absolute best natural beauty advice. As far
as products that I would recommend, I am a fan of herbal products that
are handmade.<br />
<br />
There are many <b>herbs</b> that are wonderful for the skin. In
particular, the ones I love most are <b>calendula</b>, <b>chamomile</b>, <b>marshmallow</b>
and <b>rose</b>. I use <b>rose water </b>(available at most grocery stores) daily on
my skin. The dried herbs calendula, marshmallow and chamomile can be
made into an infusion (covered with boiling water and steeped for 20
minutes or longer). Soak a cotton ball in the infusion once strained and cooled and
dab it on your face and under your eyes for a soothing wash. An infusion of
these herbs will keep in a sealed jar in your fridge for a day or two.<br />

If

Other natural beauty treatments I use myself include, raw coconut oil, cucumber, tea bags and vitamin E. <b>Cucumber</b> is so refreshing for the eyes and feels incredibly soothing on
the skin. And of course <b>antioxidant rich tea bags</b> can be placed on the
eyes to reduce puffiness and nourish the eye area. I give myself a <b>vitamin E</b> treatment about once a week. To give yourself one, just open a
capsule and massage the oil all over your face. Be gentle though when applying it under your eyes. And I really love raw coconut oil! It is an amazingly nourishing oil and it smells and feels fantastic on your skin. I use it on my face everyday.</div>

Immersing yourself in an herbal bath anytime is such a wonderful thing. After giving birth and becoming a new mother, taking time alone to soak in a healing bath is truly heavenly. And a handmade jar full of beautiful, wonderful smelling, healing herbs makes a lovely gift for a pregnant friend. I made this recipe for my friend who had a baby very recently. There are so many ways to make an herbal sitz bath. I've made these up many times for friends and for myself over the years and I don't think I've ever made it the same twice. This is the recipe I used most recently.<br />

Typically, a sitz bath is one in which only the buttocks and hips are immersed in hot water in order to generate energy and circulation to that particular area of the body. You can use this recipe as a sitz bath or you can add it to a regular bath. For a traditional sitz bath, you will need a large tub or bucket to sit in.</div>

This herbal recipe is used to assist the healing process after birth. It works wonders on the physical body and the ritual of taking time out for a warm lovely aromatic bath is also incredibly healing mentally and emotionally. A couple of weeks ago, my son pulled some horsetail out of the ground and asked me what it was. I had been looking at the horsetail and thinking that we should harvest some. It's a lovely herb, high in silica, an essential trace mineral important for the formation of bone, connective tissue, as well as healthy hair, skin and nails. We have a nice big patch of horsetail in our yard and it was the perfect time to harvest it, so that's just what we did! We cut our horsetail a few inches above the root. This ensures that they will grow back.</div>

After we collected all of our horsetail, we spread them out in a single layer to dry. Using a sheet tacked to the ceiling works really well. After a few days, the horsetail is ready to be placed in a sealed jar for storage.</div>

I didn't know that much about horsetail, just how to identify it, that it is high in silica and can be used as a diuretic. I enjoyed reading about <a href="http://www.herbwisdom.com/herb-horsetail.html">horsetail on herbwisdom.com</a> and in a few of my herbals here at home. I think it's really neat to note that horsetail used to be a big tree and reproduces by spores and not by seed. After millions of years of evolution, it is now just a little tree-like herb instead of the towering tree it was hundreds of millions of years ago.</div>

This
week I was thinking about how much I love the combination of apricot,
macadamia nut and coconut. So I tried my hand at making a raw dessert
with these flavours and I was very pleased the results. </div>

Here I present, Cocomacricot Pie...</div>

<b>Crust</b></div>

1 cup sprouted walnuts (soaked for 8 hours and rinsed thoroughly)</div>
<div style="text-align: left;">
10 medjool dates</div>
<div style="text-align: left;">
4 dried apricots</div>
<div style="text-align: left;">
1/3 cup ground macadamia nuts</div>
<div style="text-align: left;">
1/3 cup coconut powder (I use a coffee grinder to grind dried coconut to a powder)</div>

Put
the walnuts, dates and apricots in your food processor and process
until it becomes thoroughly combined and the walnuts are in very small
pieces in an apricot and date paste. Chunks are okay. Mix in the ground
macadamia nuts and coconut powder. Press this into a greased pie plate
(I used extra virgin olive oil).</div>

Raw Macadamia Nut Butter. You can make your own raw macadamia nut
butter just by processing raw macadamias for many minutes in a high
power food processor- my processor is not a very good one- or you can
buy some like this one<a href="http://www.bluemountainorganics.com/by-type/seed-and-nut-butters/raw-seed-and-nut-butters/macadamia-nut-butter-raw-lrf-8-oz" target="_blank"> here</a>.)</div>

Soak
your apricots in the warm water until they are softened. Add everything
to the blender and blend until it becomes smooth and frothy. Pour this
over your crust and place in the freezer for one hour. Serve right away
or place it in the fridge until you're ready.</div>

It's
freezing cold outside and the landscape is completely covered in snow.
These past few days I have certainly been drinking lots of warm tea but I
couldn't stop thinking about how much I'd like a creamy strawberry
milkshake. I can't remember the last time I had a <a href="http://www.guardian.co.uk/news/2006/apr/24/food.foodanddrink">fast food strawberry milkshake</a>
(check out that link- it's seriously unbelievable what's in them!). I
probably haven't had one since I was a kid. So I've done my best to come
as close as possible to the taste and texture I remember from long ago
using only healthy, natural ingredients. Seeing as it's been so long
since I've tasted one and I'm trying to replicate a taste that has been
perfected with many chemicals over many years, I'm sure it's not even
close to being similar, but I think you're gonna like this strawberry
milkshake a whole lot. This recipe has been thoroughly tested by the
Deal family and gets two big thumbs up from everyone at our house. I
hope you love it too.</div>

I was looking to make a thick and creamy hot cocoa that would taste like it was made with heavy cream and here's what I came up with...</div>

1 cup almond milk<br />
2 Tbsp cocoa powder<br />
2 Tbsp + a dolop full fat coconut milk (drain water out and just use the thick cream)<br />
Maple syrup or agave syrup to taste<br />
1/2 Tbsp arrow root powder* (or other flour will work)<br />

Pour the almond milk in a pot and turn up to medium heat
As the milk warms up add the cocoa powder, coconut milk and syrup
Stir well to dissolve all of the cocoa powder
Once it's starting to get nice and hot, pour a little of the hot cocoa into a dish with the arrowroot powder and stir until smooth
Pour this mixture back into your pot and stir
Once your cocoa is the temperature and thickness that you like, you're done!<br />

seeds because they are easier for your body to digest that way, every
time I make these it's because I get a sudden hankering and I'm too
impatient to wait for soaking. Also, un-soaked raw sunflower seeds grind
into such a nice fine powder that is just like flour. Now that I'm
thinking about it, I will try to make these with soaked sunflower seeds
and see if I get some good results and I'll update this post with the
changes that would need to be made if you do choose to soak your nuts
and seeds.</div>

2 cups sunflower seed powder</div>

4 Tbsp ground pecans</div>

4 Tbsp coconut oil (or cocoa butter, if you've got it, works great too)</div>

Grind your sunflower seeds in a coffee grinder until it's a fine powder</div>

Melt your coconut oil or cocoa butter in a double boiler</div>

I recently had the great fortune to hear the lovely <a href="http://www.susangianevsky.com/">Susan Gianevsky</a> speak. Susan is a very inspirational woman. Her passion for homeopathy and tissue salts is quite exciting to me because I too am so in love with these methods of healing. At her talk, Susan recommended <a href="http://www.naturalcalm.ca/">Natural Calm Magnesium Citrate</a> supplement. I've been feeling lately like my body needs a bit more nourishment and as soon as Susan suggested this product, I knew that myself and my family could benefit from some additional magnesium. Our wee man was sick for the past week! Goodness it's hard to watch your children suffer with an illness. This particular illness was a really intense cough and chest congestion. I gave him his homeopathic constitutional remedy along with several others that seemed indicated as his illness progressed, tissue salts, plantain/thyme/raw honey and lemon tea, lots of rest, plenty of liquids, healthy food and a little bit of my favorite natural herbal cough syrup Nin Jiom Pei Pa Koa. I also made up a couple of homemade remedies that I want to share with you.</div>

The first recipe I made was a homemade cough syrup because I didn't want to give the Nin Jiom too often. This recipe is really easy to whip up in a jiffy.</div>

The second recipe I made was a minty chest rub, reminiscent of the Vapo
Rub that my mom would have used when I was small. I was pretty excited
to do this for Eamon because I thought it would be so soothing and I
have such fond memories of my mother caring for me when I was ill as a
child. Instead however, he was far too grumpy to let me give him a chest
rub, so my daughter who wasn't ill got one instead. She loved every
minute of it!<br />

I think this recipe would be better with beeswax instead of the coconut oil so that the rub would solidify at room temperature. Once you've melted your coconut oil (or beeswax) in a double boiler, mix all of the ingredients together and pour it into whatever container you're going to store it in. If you try using beeswax and you don't find your final recipe to be a consistency that is to your liking, just gently heat it up again in the double boiler and add more or less oil and beeswax to the mix before cooling again. This smells lovely and will keep in a cool dark place for a long time. Lots of experimenting can be done with this recipe. Camphor, pine needle, balsam fir needle or a number of other essential oils would be very nice in this recipe too. Just please be sure to do your research so that you are aware of any cautions that may come with some essential oils- I added some clary sage essential oil to a bath once and it didn't end well.</div>

Soak the dates in a small amount of the coconut water for about an hour or just until the dates become soft. Toss the dates, soaking water, young coconut meat and frozen banana and vanilla into your blender and blend it up. Add more coconut water to facilitate blending. Add maple syrup and coconut water until the pudding is to your desired texture and sweetness. That's it! <br />

You can serve this right away or make it a few hours ahead of time. Coconut pudding keeps well in the fridge overnight but I'm not sure how long it keeps after that- it's never lasted that long in our fridge! </div>

morning, I was on the internet doing some research and I viewed an
image of something like this recipe. Unfortunately, I didn't pay much
attention to it so I have no idea where the original image may have come
from. I went back through my history and did a search for the
ingredients with no luck. But, the idea of this recipe lingered in
my subconscious. When the kids came down for breakfast, I had to make
them! This is our new favorite breakfast recipe. The kids asked if we
can eat these everyday.</div>

Here's what I did...</div>

Cut your ripe but firm bananas into bite sized pieces.</div>

Roll them in cocoa powder (raw or regular, try <a href="http://chocosol.posterous.com/">ChocoSol</a> for raw cocoa powder- use a coffee grinder to grind it more if yours, like mine, is a bit coarse).</div>

Place a dollop of your favorite nut butter on top.</div>
<div style="text-align: left;">
Take a pinch of unsweetened coconut flakes in your fingers and press them into the nut butter dollop.</div>

I made a double batch of my raw chocolate pudding recipe that I shared with you last week. You'll notice that I made an update to that recipe because while I had made it a couple of times very successfully before I posted it, I tried it again and it came out runny. In the update, I give you ideas for fixing that if it happens to you. </div>

1/2 cup sprouted* almonds (*soaked overnight and rinsed thoroughly)</div>

1 1/2 cups water</div>

5 pitted medjool dates or a handful or more of raisins</div>
<div style="text-align: left;">
5 heaping Tbsp of cocoa powder or raw cocoa powder (it has to be very finely ground- grind it well in a coffee grinder if it's not) </div>

raw honey to taste (about 1-2 Tbsp)</div>
<div style="text-align: left;">
5 tsp finely ground flax seed powder (or the amount needed to reach the consistency desired)</div>

After making a double recipe of the chocolate pudding, I added another heaping Tbsp of cocoa as well as three frozen bananas and a 1/2 cup of raisins.</div>

Add the filling ingredients to the blender and blend until smooth and creamy. Pour this mixture over the crust.</div>

I actually used coconut milk instead of water. Unfortunately because I live in Canada it is next to impossible to get fresh raw coconut milk so I had to use it from a can. This added a really nice flavor to the topping. Fresh coconut milk would be absolutely incredible in this recipe. Or next time I might try adding a touch of this <a href="http://www.rwknudsenfamily.com/products/natural-juices/pineapple-coconut/">pineapple coconut juice</a>. Have you tried this juice? It's delicious!</div>

Instead of macadamia nuts, Ann Wigmore's recipe calls for pine nuts or you could also use cashews. </div>

Eating this right away is divine! Otherwise, you can freeze it and eat within two days. It's easy to eat it all up quickly because it's so healthy you can eat it for breakfast, and that's just what we did! Also, I have made just the filling a couple of times using frozen bananas. We call it banana ice cream. Yum!</div>

I tried this recipe a few times before posting it and it turned out perfectly. However, when I tried it again today, it came out very thin. I think, because I used honey dates instead of medjool dates. I added a few more dates, some raisins and even a bit more cocoa and flax to reach the consistency I wanted. You can do this too if yours turns out to be too thin and watery.</div>

Also, this makes an excellent chocolate banana shake if you reduce the amount of ground flax and dates/ raisins and add a frozen banana. </div>

<b>Ingredients</b></div>

1/2 cup sprouted* almonds (*soaked overnight and rinsed thoroughly)</div>

1 1/2 cups water</div>

5 pitted medjool dates or a handful of raisins</div>
<div style="text-align: left;">
5 heaping Tbsp of raw cocoa powder (can be substituted with regular cocoa or carob powder)</div>

raw honey to taste (about 1-2 Tbsp)</div>

4 whole apples cored and chopped (I leave the peels on)</div>

juice from one lemon</div>

maple syrup to taste (it depends on the type of apples you use whether it needs to be sweetened)</div>

These
orbs are incredibly healthy and every man, woman and child I've offered
them to loves them! They are very easy to make but do require planning
because you must soak the nuts. Soaking your nuts makes them more
digestible because by soaking them, you wash away enzyme inhibitors and
begin the sprouting process. This is very beneficial for your body.
Squirrels and other animals bury their nuts and eat them after they have
begun to sprout (animals are so much smarter than we are).</div>

Victoria Boutenko. This is a great book for anyone who wants to learn
more about the raw food diet. When I make these, I tend to wing it and
just add whatever amounts seem right at the time but I'll write out a
proper recipe for you here that you can change to suit your taste.</div>

1/4 cup raw almonds (soaked over night)</div>

We had a very enjoyable long weekend. Today, I have a story to share about something that happened to me this weekend.</div>

I left the house early Friday morning to pick up my children from my sister's house. As I left my house with coffee in hand I thought to myself, I don't need anything, I'm just running over to my sister's to pick up the kids and then coming home. As I drove down my street, I remembered that I needed gas. The gas station at the bottom of my road wouldn't be open this early so I figured that I'd just pull off the highway part way there and fill up on the way. I pulled into the gas station 20 minutes into my trip (about halfway there) and, no wallet, no money and not enough gas to get to my sister's house or to return home. What to do, what to do?</div>

So at this point, I'm frustrated at myself for being such a space cadet! How could I have been so foolish!? I decide to drive a bit further to an exit near a friend's house. If worse comes to worst, maybe she can come by and help me out of my bind. I pull into a gas station and look for money to make a phone call. I search all over the car and I'm ten cents short.</div>

So, I place a collect call to my husband. He is really patient with me which surprises me because this sort of thing happens more often than it should. I tell Johnny I'll call him back in ten minutes while he phones our friend and my sister to find a solution to my predicament.</div>

Ten minutes later, I phone back and he explains that he's called the gas station where I am and they are willing to give me $10 in gas. With my tail between my legs I explain to the man behind the counter that I am the fool who left home with no gas and no money and he lets me know that I can have $10 worth of gas. I thank him and let him know that I will return shortly to pay him back. He nods his head and I sense that he's not confident that I will return, but that he's willing to be kind to me whether I pay him back or not. Although I feel awkward about having to take the gas, my heart is warmed by his gesture of kindness.</div>

I put $9.99 worth of gas in my car, waved to him through the window and drove to my sister's house thinking about how I have to ask her to rescue me once again, feeling foolish and wondering why I haven't learned this lesson yet. But then I decide that all I can do is try to learn from the situation and I try to think positively.</div>

One of the things that comes to mind that makes me smile is remembering what my mom told me about my late father. Every year they would travel to Prince Edward Island, where my father was from. Learning from the first trip they took there together after they were married, my mother would have three sets of car keys cut and take them with her in her purse. Without fail, on each visit, my dad would lose at least one set of car keys on the beach somewhere. I smile and think of how much I loved my father and what a fantastic person he was. In particular, I think about how often I got to see him take joy in simple things, and I think, if I have inherited this from him, so be it. Perhaps my tendency to not always plan well or think everything through everything in my life makes me joyful and fancy free like he was.</div>

After picking up my children, I drove back to the gas station and went to see the man who gave me gas. I said, "thank you so much for your generosity today", and I gave him the $40 that my dear sister (who has helped me out of countless binds and also who, by the way, laughed and said, "I do that sort of thing all the time") gave to me. I asked for an additional $20 worth of gas and explained to him that the other $10 was going in the glove box so that I wouldn't be in this rut again. The smile on the man's face made my day and brings a tear to my eye as I write this. And I can't help but think to myself that if I had had $10 in my glove box, I would never have had the opportunity to have an exchange of kindness with this man.</div>

The following day I need to ask a woman in a parking lot for change for a dollar to make another phone call. We exchange smiles and I have a nice conversation with her and her husband as they search their wallets for quarters. These moments of vulnerability allow for kind interactions with strangers that bring me joy. If I were different; well prepared, well organized, self sufficient, I would have fewer reasons to reach out to people in my community. Hmm...</div>

I find my mind wandering to people who take great journeys, walking on foot with no provisions for themselves and live for a time off of the kindness of others. And I think about how this must be such a humbling and heart warming experience for the person walking and for those who take them in.</div>

After writing the draft for this post yesterday, I finally got around to watching a video that was recently recommended by a friend. When I started watching this <a href="https://www.ted.com/talks/brene_brown_on_vulnerability?language=en" target="_blank">Brené Brown talk</a>, I was once again amazed by how life works and things come together just as they should. You start a conversation with one person (or yourself) on one day and find yourself continuing that conversation at another time with someone else.</div>
